Stuffed Eggplant: Recipe

Ingredients:

  • eggplant – 600 gr
  • chicken breast – 270 gr
  • carrots – 60 gr
  • onion – 25 gr
  • tomatoes – 400 gr
  • semi-hard low-fat cheese – 100 gr
  • eggs – 2 pcs

Cooking:

  1. Cut the eggplant into 2 halves, cut out the middle.
  2. Cooking the minced meat: chop the chicken breast, 1/4 chopped eggplant centers, onions, grated carrots and eggs.
  3. We stuff the eggplants, put them on a baking sheet, put the tomatoes in circles on top.
  4. Sprinkle with grated cheese.
  5. Bake at 180 for 30-40 minutes.
