Recently, I practically do not buy bread, instead I bake crispy silk bread. He shared with me the recipe for these mouth-watering and crispy tortillas by the father-in-law. He once served in Karaganda, where he learned about them.
Shelpek flatbreads are a traditional Kazakh dish that has several varieties. Usually they make 7 silkies, sometimes 9. These cakes are prepared from only three ingredients, and you don’t need to put yeast into the dough.
Silks are fried in a pan in a few seconds, inside they are not greasy, since the dough does not absorb oil.
Today we’ll show you how to make yeast-free quick tortillas. Fry in 12 seconds!
- 500 g flour
- 200-220 ml. water
- 1 teaspoon salt
- vegetable oil for frying
Combine warm water with salt in a convenient container, stir. Sift the flour into a bowl and then pour the salt water into it.
Knead the dough, cover it with a towel and put it in a warm place for half an hour.
Pummel the dough, divide into 7 or 9 parts, roll a ball from each part, cover with cling film and leave for another 20 minutes.
Roll each part into a thin cake, about 3 millimeters thick.
Fry each flat cake in highly heated oil for about 5-6 seconds on each side. When frying, it is important to rotate the silk in a circle with a fork. This makes the tortillas fried better.
Transfer the scones to a paper towel to remove the grease.
That’s all, Kazakh cakes without yeast are ready. Bon Appetit!
