How to make plum jam

Man is so fond of plums that over the past couple of hundred years, he has developed about 2000 varieties for different tastes. Here and “White Honey” yellow with a honey flavor, and “Stanley”, which withstands 30-degree frosts, and the fruitful “Souvenir of the East”.

It’s a shame that you can’t enjoy these sweet and juicy fruits all year round, and therefore, on the eve of the plum season, it’s time to think about spinning for the winter in order to save some summer fruits until frosty times.

My grandmother had a huge variety of plums on the site. It goes without saying that at the end of summer my brother and I, regulars in her garden, overeat blue-purple fruits to the dump. In one August, we got so tired of plums that we turned up our noses from plum jam in winter. However, Grandma’s jam was unlike anything we’ve ever tasted and was eaten with a bang.

Grandmother made plum jam so that it was mistaken for a store jam. But it was worth trying and … it was already difficult to stop. Jam “Plum in chocolate” remained one of the most vivid memories of the culinary talents of her beloved granny, but she always approached the preparation creatively, so that the same dish every time had a unique taste.


  • 2 kg solid drain
  • 700 g sugar
  • 70 g cocoa powder
  • 150 g butter
  • a pinch of vanilla


Cut each plum in half and remove the pits. Place the peeled fruit in a saucepan, cover with sugar and leave for an hour. Then stir the mixture and put on fire.

When the jam boils, add the vanilla and cook over low heat, periodically skimming off the foam. Cook until the foam stops forming (about 30 minutes).

Now add the butter and cocoa powder. Stir well and keep the jam on low heat for another 20 minutes.

Pour the jam into pre-sterilized jars, roll up the lids, turn it over, wrap it with a blanket and leave it upside down to cool.
Delicious pitted plum jam for the winter is ready. Its delicate chocolate aroma will attract to the table even those who do not really like canned plums and prefer, for example, healthy prunes.

The beauty of plum jam is that it can be prepared with different ingredients to delight home and guests with new flavors and aromas. And for those who want to treat loved ones with something strong, dessert plum liqueurs are suitable, which we have already talked about earlier.
