How to cook potato zrazy with minced meat

Zrazy is a dish of Lithuanian, Belarusian, Russian, Polish and Ukrainian cuisine, which is a cutlet or meatloaf with a filling. According to the Chronicles of the Glorious Kingdom of Poland, Polish king Władysław Jagiello loved zrazy very much.

According to one version, the authorship of this dish is attributed to the Milanese princess Bona Sforza. It is unknown whether it is true or not, but potato zrazy with minced meat have firmly established themselves in our menu.

Potato base ingredients:

  • 12 medium potatoes
  • 2 eggs
  • 1 onion
  • 5 tbsp. l. flour
  • 1 bay leaf
  • 1 teaspoon salt

Ingredients for the filling:

  • 500 g minced meat
  • 1 onion
  • salt and pepper to taste

Potato zrazy with minced meat:

  1. Cut the potatoes into large pieces and boil until cooked. Don’t forget to add salt.
  2. Without letting the potatoes cool, turn them into puree.
  3. Peel and finely dice the onions.
  4. Fry finely chopped onion in vegetable oil, add to the minced meat, mix everything, salt and pepper to taste.
  5. Add the egg, flour to the cooled potato mass and mix.
  6. Shape the potato dough into small balls. Roll each one into a cake. Place a tablespoon of minced meat in the center of each ball.
  7. Form a potato pie by gently joining the edges of the pie together.
  8. Dip the finished pies in flour. Pour some vegetable oil into the pan. Fry the zrazy, first on one side, and then on the other, until golden brown.
  9. Potato zrazy with meat are ready.
