  • 1 kg minced chicken
  • 1 onion
  • 2 eggs
  • 2 tbsp. l. corn flour
  • 5 tbsp. l. wheat flour
  • 2 tbsp. l. lemon juice
  • 200 g butter
  • 100 g hard cheese
  • 300 ml of vegetable oil for frying
  • baking powder
  • 2 tsp spices
  • 1 bunch of dill


If you are a happy owner of ready-made minced meat, then you can skip this point. If not, then you have to work hard, namely vigorously turn the meat grinder handle. Following the chicken fillet, you can mince and onion, add pepper and salt, the minced meat is ready.

Cut the butter into small sticks across the briquette and place it in the freezer to keep it soft. Grate the cheese on a fine grater, then chop the dill. However, you can do the opposite: first dill, and then cheese – this is your sacred rite.

Prepare the batter like this: mix two eggs with two tablespoons of lemon juice, add a teaspoon of salt and half a teaspoon of paprika, turmeric and dry garlic each. Toss, then add 2 tablespoons of wheat and corn flour, a pinch of baking powder, and a quarter cup of water. Here carefully: the remaining wheat flour (3 tablespoons) is needed in order to roll cutlets in it before frying.

You will need cling film to form cutlets. Put a piece of minced meat on it and knead it into a cake. Take a lump of butter, dip it either in dill or cheese, use a film to form a finger. Dip it generously in flour and batter and send it to the hot pan.

Ignore the groans and sighs of hungry children and a husband who smelled familiar flavors and lined up right behind your back, carefully fry the cutlets on both sides.
