Salads do not have to be seasoned with mayonnaise, and we have found recipes for you that do not contain this high-calorie ingredient.
Egg salad “Health”
Ingredients:
- 4 hard-cooked eggs plus 2 hard-cooked eggs (reserve excess yolks for later use or discard)
- 3/4 cup diced celery – about 3 medium stalks
- 1/4 cup plain fat-free Greek yogurt
- 1 teaspoon Dijon mustard;
- 1/2 teaspoon kosher salt;
- 1/4 teaspoon black pepper;
- 1 tablespoon chopped fresh dill.
Optional: Whole grain bread – toasted (makes 4 sandwiches). Arugula – tomatoes, extra chopped fresh dill.
Cooking method:
- Peel the eggs and cut into cubes. Place in a large bowl, then stir in the celery, Greek yogurt, mustard, salt, pepper, and dill. Stir to combine.
- Serve egg salad on toasted bread with tomatoes and arugula, or enjoy it on its own.
