Egg salad

Salads do not have to be seasoned with mayonnaise, and we have found recipes for you that do not contain this high-calorie ingredient.

Egg salad “Health”

Ingredients:

  • 4 hard-cooked eggs plus 2 hard-cooked eggs (reserve excess yolks for later use or discard)
  • 3/4 cup diced celery – about 3 medium stalks
  • 1/4 cup plain fat-free Greek yogurt
  • 1 teaspoon Dijon mustard;
  • 1/2 teaspoon kosher salt;
  • 1/4 teaspoon black pepper;
  • 1 tablespoon chopped fresh dill.

Optional: Whole grain bread – toasted (makes 4 sandwiches). Arugula – tomatoes, extra chopped fresh dill.

Cooking method:

  1. Peel the eggs and cut into cubes. Place in a large bowl, then stir in the celery, Greek yogurt, mustard, salt, pepper, and dill. Stir to combine.
  2. Serve egg salad on toasted bread with tomatoes and arugula, or enjoy it on its own.
