For a hearty and flavorful lamb kharcho, almost all of the same ingredients are required as for pork soup.

What is needed

  • lamb on the bone – about 600 g;
  • white rice in the amount of 150 g;
  • a couple of ordinary onions;
  • three large ripe tomatoes;
  • tomato-based pasta about 1 tbsp. l .;
  • spicy adjika in an amount corresponding to preferences;
  • salt pepper;
  • hops-suneli;
  • laurel leaf;
  • other spices and herbs – paprika, saffron, coriander seeds, basil;
  • greens;
  • garlic;
  • walnuts.

How to cook lamb kharcho

  1. Some culinary experts claim that to cook juicy, soft and tasty lamb, it should be placed not in cold water, but already boiled. Therefore, it is worth boiling water and placing a piece of meat in it.
  2. You need to boil lamb for 1.5-2 hours with one whole onion and a laurel leaf, but after an hour you can start starting the main ingredients, not forgetting to take out the onion. Well-washed rice is sent to the saucepan first.
  3. Cut the remaining onion into thin quarters of half rings, crush the garlic in a mortar.
  4. Finely chop the greens. Remove the meat and separate from the bones, and then return it to the soup again.
  5. Saute the onion in oil, and then add tomatoes chopped with a blender with all the spices and herbs.
  6. Add tomato paste, adjika and ground hot pepper. Those who like it a little bit more can add a couple of hot pepper pods. Add chopped prunes and walnuts here if desired.
  7. After 5 minutes, send the contents of the pan to the pan, darken a little, add garlic and you can turn off the gas.
