– Soy is rich in medicinal and nutritional substances. It contains a lot of complete, easily digestible protein (35% – more than meat and chicken) and a balanced set of amino acids. Lecithin contained in soy is involved in the restoration of nerve tissue, brain cells, regulates cholesterol levels and fat metabolism. Minimally processed whole soybean products are recommended – sprouted soybeans, soy sauce, butter, milk, tofu. The benefits of soy products that mimic meat and fish are questionable.
